In a discreet location near Place de l’Étoile, Paris, an unusual luxury dining experience unfolds, where installation is redefining the relationship between art and gastronomy. Presented by WE ARE ONA, the experimental culinary collective founded by Luca Pronzato, Dalad’s brings together internationally acclaimed artist Rirkrit Tiravanija and celebrated Thai chef Dalad Kambhu for an immersive restaurant experience coinciding with Art Basel Paris 2026.
Running from October 19 to 25, the temporary restaurant marks Kambhu’s third collaboration with WE ARE ONA, whose innovative projects have progressively challenged conventional ideas of fine dining. Here, the luxury dining experience extends beyond exceptional cuisine to encompass architecture, cultural storytelling, and collective participation.
At the heart of Dalad’s stand two monumental stainless-steel structures conceived by Tiravanija. Inspired by traditional Thai fishing boats, their elongated, reflective forms reinterpret vernacular maritime architecture through a contemporary sculptural language.
The installation makes the luxury dining experience, with polished metallic surfaces contrast with the surrounding raw architecture, establishing a striking dialogue between industrial modernity and cultural memory. Yet these structures function beyond their sculptural presence. Integrated seating and steam pots transform the boats into communal dining tables where chefs prepare dishes directly before their guests.
This architectural arrangement dissolves the conventional division between kitchen and dining room. Culinary preparation becomes visible, inviting diners to experience cooking as a shared performance.

For Tiravanija, whose artistic practice has long explored social interaction through cooking and communal gatherings, the installation continues an enduring investigation into how everyday activities can become meaningful artistic encounters.
Complementing Tiravanija’s architectural vision, Dalad Kambhu introduces a culinary interpretation of Thailand that bridges traditional recipes with contemporary techniques and carefully selected ingredients.
Her approach emphasizes the cultural significance of Thai cuisine while allowing familiar flavors to evolve through modern gastronomic experimentation. The boat-inspired setting reinforces this connection, evoking Thailand's waterways and the informal culinary traditions associated with floating markets and riverside communities.
Accommodating up to 100 guests per seating, Dalad’s encourages an unusual intimacy within a large-scale hospitality setting, challenging the exclusivity and separation traditionally associated with luxury dining.
Dalad’s reflects a broader evolution in contemporary hospitality, where artistic collaboration and experiential design increasingly influence perceptions of luxury.
Its temporary existence also introduces an element of impermanence. The restaurant is conceived for a specific cultural moment, transforming an ordinary Parisian location into a space for culinary experimentation and human connection.
By integrating sculpture, architecture, and gastronomy into a single environment, WE ARE ONA proposes a compelling vision of the luxury dining experience: one defined by cultural imagination, creative exchange, and the extraordinary possibilities of sharing a table.
